FRIED WHITEBAIT

Ingredients
200 g. whitebait, 2 eggs, flour, garlic, salt, extra virgin olive oil cultivar Taggiasca

Preparation
make the batter with an egg, flour, some water, parsley, salt and finely-chopped garlic. Beat well and dip the cleaned, dried whitebait. Fry in very hot oil. When they are golden on both sides, remove and place on absorbent paper. Sprinkle with fine salt and heat hot. Interestingly, whitebait can also be eaten either as fritters or boiled when seasoned with extra virgin olive oil cultivar Taggiasca and salt.
