LIGURIAN PIZZA

Ingredients
500 g. flour, 25 g. brewer yeast , glass of milk, 4 salted anchovies, 1 onion,
400 g. peeled tomatoes, a handful of olives in brine, some garlic cloves, basil,
oregano , salt, extra virgin olive oil cultivar Taggiasca.
Preparation
prepare
the pastry using the flour, yeast, milk, extra virgin olive oil cultivar Taggiasca
and a pinch of salt and let it rise for at least 2 hours, covered by a cloth
( preferably of wool). Make the pizza sauce with the onion, tomatoes and basil;
roll out the pastry and place it on a greased baking tray and spread the pizza
mix sauce, olives, unpeeled cloves of garlic, rinsed and dried anchovies and
oregano. Bake in the oven for around 30 minutes at 180°.
Wine suggested: pigato
