POOR MANIS RAVIOLI

Ingredients
flour, salt, extra virgin olive oil cultivar Taggiasca, spinach, chard, borage, ricotta cheese, eggs, grated Parmesan , marjoram.

Preparation
make the pastry with the four, salt, water and extra virgin olive oil cultivar Taggiasca and roll out into fine sheets; in the meantime, boil the spinach, chard and borage ( it is not absolutely essential that you use all three of these leafy vegetables) and then chop them finely.Mix with the eggs, ricotta, Parmesan, salt and marjoram. Dot the mixture on the pastry and cut the pastry and close to make small envelopes.
