POTATO GNOCCHI

Preparation
grate around 12 boiled potatoes into a container. To this add a good pinch of
salt, some flour and an egg. Blend the mixture adding the flour until a type
of dough is obtained. Use a teaspoon to form the gnocchi, which should then be
placed in a pan of boiling water. Boil for around 10-15 minutes, strain and dress
with a tomato, meat (Bolognese) or pesto sauce.
Wine suggested : vermentino
