VEGETABLE PIE "TORTA VERDE"

Ingredients
flour , chard leaves, rice, grated Parmesan, eggs, extra virgin olive oil cultivar
Taggiasca, salt.
Preparation
chop the chard leaves finely and
mix in a dish with the rice ( in proportion about half the amount of chard),
one or two eggs, the grated Parmesan, the extra virgin olive oil cultivar Taggiasca
and salt. Prepare a fine sheet of pastry using the flour, warm water, salt
and little extra virgin olive oil cultivar Taggiasca . Grease a baking dish,
preferably one without too high a rim, and line the pastry, fill with the
mixture and then cover with another fine sheet of pastry. Prick some holes
in this with a fork, drizzle with olive oil and bake in a hot oven.
Wine suggested: vermentino
The filling of the pie can be changed according to the availability of seasonal produce like grated raw courgettes, chopped raw artichokes and fresh peas.
